Chef’s Tasting Menu Dinner Series- September 2014
We focus the Chef’s Tasting Menu dinners around classic European dishes overlooked by so many restaurants because of the time of preparation involved, the patience required, or the cost of premium ingredients. Invite a few friends and come to one of our classic sit down, reservation only, tasting menus with your own great bottle of wine. Each dinner boasts a single round of service with communal style dining which gives our guests the opportunity to break bread with new friends over great conversation. We are always BYOB with no additional corkage fee.
Event pricing is listed in the description. All pricing excludes tax and gratuity. As always, The Bastion is a BYOB facility. Event tickets must be purchased in advance.
Sunday, September 7, 4pm- Summer Sunday Supper: Italian- We all know Texas summers can be brutal, so why heat up your kitchen when you can join us for a relaxing time with Chef Riccetti at the reigns? Enjoy a stress free Italian dinner with your family and we’ll even do the dishes. Our Sunday Suppers offer one seating for service, and will begin at 4pm with doors opening at 3:45pm. Ticket pricing for this event is $40 for adults and $10 for children 8 and under before tax and gratuity.
Saturday, September 13, 12pm- New Orleans Jazz Brunch- New Orleans cuisine is known for its eclectic flare full of satisfying flavors. For this Chef’s Tasting Menu event Chef Riccetti will be putting her French-Creole spin on popular brunch classics.
Saturday, September 20, 7:00pm- Beef Wellington Dinner- This flagship dinner of The Bastion has quickly become an annual favorite. Join us as Chef Riccetti demonstrates the perfect preparation of this French classic.
Culinary Class Series- September 2014
Learn to cook from a seasoned professional culinary instructor on professional equipment with hands-on instruction. Class size limited to 6 students in order to ensure quality, individual attention. Don’t just get stuck sitting in the back of a classroom watching someone prepare a dish, join us and really learn how to cook. Each class includes two hours of hands on cooking and preparation of recipes in a professional kitchen setting with a world class culinary instructor. At the completion of each class students will sit down to a full service five course feast of the items that they prepared during the class as well as some chef created surprises.
Class tuition is $90 before tax and gratuity. Advance payment is required to reserve your space.

Saturday, September 6, 6pm- Mediterranean Flavors: Malta Class- Expand on basic Mediterranean flavors as Chef Riccetti focuses on the diverse cuisine of Malta
Thursday, September 11, 6:30pm- No Substitutions Vegan Class- Students will learn tips and techniques as they create flavorful and satisfying vegan fare that does not sacrifice flavors or texture.
Thursday, September 18, 6:30pm- Cheese Class- Gain hands on experience with making different types of cheeses in your own kitchen. Chef Riccetti will expand on how to select the best milk for your particular cheese type, as well as how to use different types of curd starters that will add unique flavor profiles to your favorite fromage.
Lunchtime Cooking Fundamentals Classes
Our popular lunch hour classes focus on teaching kitchen fundamentals basic techniques and foundation recipes every aspiring chef should have in their repertoire. These are one hour classes offered at lunch time and each student will leave with new skills, useful tips, and a gourmet lunch bag! These classes are perfect for our busy friends who need a creative break in the middle of the day.
Each class begins promptly at 12 noon and ends at 1pm. Tuition is $30 per person excluding tax and gratuity. Advance payment is required to reserve your space.
Tuesday, September 10: Knife Skills- Learn about different styles of knives, their care, and proper uses to give you the longest life for your collection.
Tuesday, September 17- Meat Fabrication- Breaking down your own meat is not only economical, but also gives you the luxury of customizing the perfect cuts. Students will learn basic butchery and meat fabrication, from safety to grading and local sources for the finest bulk meat orders.
Each class begins promptly at 12 noon and ends at 1pm. $30 per person before tax and gratuity. Prepaid reservations only. Tax and gratuity will be charged at the time of booking.
